The Richness of Panamanian Cuisine

As the land bridge between North and South America, Panama is home to a large variety of food ingredients that is used to create its native cuisine. Many of the roots of the cuisine are a fusion of African, Spanish and Native American influences. Common ingredients included in dishes are maize, rice, wheat, flour, plantains, cassava and other meat products and seafood.

The most common ingredient in Panamanian cuisine is corn. Unlike other South American preparations, the corn kernels are first boiled in water and then ground up to create a dough mixture for use in the dishes. The following are the common Panamanian dishes prepared throughout the country.

a) Tortillas. These sandwich like preparations measure between ten and twelve inches in diameter cooked on a griddle or smaller ones that are deep-fried. The contents can differ from one area to another, but most often are meat and beans together with a salsa for everyone

b) Bollos. This is corn dough that is wrapped in a cornhusk or plantain leaves and then boiled. There are the fresh corn bolos and the dry corn bollos. The dry corn bollos is often flavored with butter, corn or stuffed with beef.

c) Torrejitas de Maize. This is a fresh corn fritter often with a sugar or sweet syrup;

d) Empanadas. These can be made from flour or corn often stuffed with meat, cheese or sweet fillings like fruit marmalades or dulce de leche.

e) Savory dishes. These are often with rice and a specific viand to complete the meal. These are arroz con guandu or rice with pigeon peas, arroz con bacalao or rice with codfish, arroz con pollo or rice with chicken. Mondongo a la culona or stewed beef tripe with vegetables, salpicon de carne or meat sizzled in sauce, lengua guisada or stewed beef tongue and bistec picado or chopped beefsteak.

f) Desserts. The Panamanian sweets consist of rich milk and in season fruits. These include Bocada de la Reina, cabanga, Huevitos de Leche, Tres Leches, Pesada de Nance and Cocadas.

g) Drinks. There are many drinks indigenous to Panama, from non-alcoholic to alcoholic. These include Chicha, Resbaladera, Kahlua, Licuados or fresh fruit juices that is heavily sweetened.

Thus when in the country, it would be best to experience true Panama through its food and cuisine. The choices are many and surely it would satisfy the stomach as well as the soul of the weary traveler between two worlds. Do not hesitate to fill your needs in Panama.

Mumbai- The Heart and Soul of India

Mumbai. The majestic, bustling, stimulating city that sits on the edge of the Arabian sea. Once called Bombay, this dazzling city is a study in contrasts.
Perhaps the country’s most cosmopolitan city, Mumbai is made up of a cluster of seven islands and inhabited by 17 million Mumbaikers… making this metropolis one of the most populated cities in the world.

In 1661, Mumbai was presented to King Charles II as part of the dowry when he married Princess Catherine de Braganza of Portugal. After leasing the land to the East India Company, the British propelled Mumbai on its quest for industry with docks and trading posts on its plentiful ports.

Most recently targeted by terror attacks in 2008, it did not take long for this city to emerge from the ashes and prove everlasting resilience.

Visitors often dismiss Mumbai as not being representative enough of the “real India”, accusing the city of being too western, too urban, too unlike what they want India to be. The fact is that Mumbai is India in high voltage. This is a place bursting at the seams with the cultures and cuisines, hopes and dreams, languages and races, petty quarrels and disgruntled compromises of over 16 million people. Mumbai is the economic engine that drives India. It is home to the country’s two stock exchanges, it’s central bank and commodities markets, as well as the headquarters of thousands of companies. Not only does the commerce keep Mumbai on the move, the city is India’s biggest manufacturer of popular culture–film, television, music, dance, fashion. It has dominated the popular imagination through the hundreds of books, movies and songs it has inspired, its headline-grabbing gangsters and the supercops that deal with them, and surprisingly for a city with few open spaces–it is also home to some of India’s greatest cricketing heroes.

But if the real India is supposed to be appalling living conditions, shocking poverty, and a gross neglect of basic human rights then Mumbai is real–disastrously real for the 55 percent of its residents who live in desperate slums. The city’s infrastructure is crumbling by the nanosecond, property prices are too high for the lower and middle classes to afford proper housing, the roads too narrow and battered to handle the exploding traffic and clean water is scarce. It’s electric supply is dwindling too, yet, paradoxically, Mumbai is the only Indian city with almost no power cuts.

It’s hard to remain an observer in Mumbai. The city has a habit of grabbing you by the collar and demanding that you get involved. Mumbai is a noisy, exhilarating, bewildering, enchanting, exasperating, chaotic, smelly and sometimes a desperately upsetting city. It will insist on getting in your face even -indeed especially- when you don’t want it to. Try to let it just wash over you, then it’s time to dive in and swim
